Modeling process conditions of modified starches to be used as wall materials in the encapsulation by nano-spray drying

In the present work, time-variable modeling of high-energy mechanical grinding (0, 20, 30, 40, 50, 60, 70, and 80 min), was carried out to obtain best conditions process for obtaining modified starches with applications as wall materials favorable viscosity particle size characteristics nano-encapsulation bioactive compounds by means nano-spray drying. The pasting profile affected different times, since maximum (95 ºC) decreased time increased, but this not case in cooling stage (30 at times 30 40 min more significant than viscosity. showed larger sizes compared their native counterpart, indicating formation of agglomerations. model presents an adequate fit respect experimental data feasible infeasible are represented.
